Wash and boil the arbi till soft (but not mushy). Peel and mash it in a mixing bowl.
Also, add lemon juice and kuttu ka atta. Mix well until it reaches binding or dough-like consistency. Avoid using water.
In a mortar and pestle crush the walnuts and mix it with mashed arbi.
To this, add green chillies, ginger, coriander, cumin powder, red chilli powder, and sendha namak.

Divide into small portions and shape into flat round tikki.
Heat ghee on a non-stick tawa/pan and shallow fry the tikkis on medium flame until golden brown and crisp on both sides.
Serve hot with satiating mint chutney or curd dip.
