Konkani Coconut Chicken Curry is a flavourful main course dish that offers a seamless blend of spiciness and subtle sweetness that pairs well with rice and parathas too. Try the recipe.
500 gms chicken, 3 onions, 10 curry leaves, 2 tbsp ghee, 1/2 tsp garam masala, and salt to taste.
10 Kashmiri red chillies, 2 tbsp coriander seeds, 4 garlic cloves, 1/2 tsp turmeric powder, 1 tsp cumin seeds, 1/4 tsp fenugreek seeds, 1/2 tsp fennel seeds, 1 cinnamon stick, 10 black pepper, 4 clove
Heat 1 tsp oil in a pan and roast all the spices for masala paste, except garlic, turmeric powder, and tamarind for 2-4 minutes.
Let them cool down and grind into a fine paste using enough water.
Now, marinate the chicken with salt, masala paste and let it rest for 2 hours.
Heat the oil in a pan and sauté the chopped onion and curry leaves for 1 minute.
Add the marinated chicken pieces and cook for 15-20 minutes.
In the meantime, make a paste of coconut and cumin seeds and set it aside.
