Soak mixed dried fruits in orange juice overnight to enhance flavour and moisture.
Preheat the oven to 180°C and grease a cake tin with oil.
Sift flour, baking powder, baking soda and warm spices evenly.
Mix oil, brown sugar, plant-based milk and vanilla until smooth.
Fold soaked fruits and chopped nuts into the wet mixture gently.
Gradually combine dry ingredients with wet ingredients to form a smooth batter.
Add orange zest or mixed spice for a festive aroma.
Pour the batter evenly into the prepared cake tin.
Bake for 40–45 minutes, or until a skewer inserted in the centre comes out clean.
Allow the cake to cool completely before slicing and serving.
